Since the lock down I have managed to put on approximately 8 pounds. I am thinking its just because I have such easy access to food constantly right now. I am exercising more, but certainly gaining weight. No way around it.

My goal is not to be at the weight I wish I was. I’m not sure I’ll ever see that again with our lifestyle and the fact that I hate gyms. I love being outside. I just want to be healthy, whole and energetic.

Don’t get me wrong, I am making efforts and here is one I fell in love with!

This recipe is the Roasted Cauliflower spiced rice bowl with a cilantro sauce and a wonderful surprise in a bite of pomegranate seeds. You can find these in the produce section of the market.

This recipe took me about 15 minutes to make and the kids even ate it. It is vegan, but I used regular mayo and sour cream for the sauce. I ‘m happy enough making it vegetarian.

I’m not a vegetarian but I like to pretend to be one occasionally. Its not about being a label, its about eating better, healthier foods and being a better home chef. That’s a title I do like to apply to myself.

Click the link to the cookbook, I haven’t made a bad recipe out of it yet. Dont be afraid of the title  or the word “vegan.” Remember, its about having a healthy life style, being full of energy and clarity of the mind.
